Ingredients
  

Pork & Sauce
  • 1.5 lbs pork tenderloin trimmed
  • salt to taste
  • black pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter divided
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 0.75 cup heavy cream
  • 2.5 tbsp Dijon mustard
  • 1 tsp fresh thyme

Method
 

  1. Season pork tenderloin generously with salt and pepper.
  2. Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat.
  3. Sear pork on all sides until golden brown.
  4. Cook until internal temperature reaches 145°F, then remove and rest.
  5. Add remaining butter and garlic to skillet; sauté briefly.
  6. Deglaze pan with chicken broth and reduce slightly.
  7. Stir in cream, Dijon mustard, and thyme; simmer until thickened.
  8. Slice pork and return to skillet, spooning sauce over before serving.

Notes

Do not overcook pork tenderloin; resting ensures juicy slices.
