Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 0.75 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 0.25 tsp salt
  • 0.75 cup pistachios finely chopped
Chocolate Dip
  • 1 cup dark chocolate chips

Method
 

  1. Preheat oven to 325°F (165°C) and line baking sheets with parchment paper.
  2. Cream butter and powdered sugar until smooth. Mix in vanilla extract.
  3. Add flour and salt, mixing just until combined.
  4. Fold in chopped pistachios evenly.
  5. Chill dough for 30 minutes, then slice into rounds.
  6. Bake 14–16 minutes until edges are lightly golden. Cool completely.
  7. Melt chocolate and dip cooled cookies. Let set before serving.
