  • 3 cups cooked jasmine rice preferably day-old
  • 1.5 cups fresh pineapple diced
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 3 green onions sliced
  • 2 cloves garlic minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 0.5 tsp red chili flakes adjust to taste
  • 0.5 tsp black pepper

Equipment

  • Wok or Large Skillet
  • Cutting board
  • Chef’s knife
  • Spatula

Method
 

  1. Heat vegetable oil in a wok over medium-high heat.
  2. Sauté garlic until fragrant.
  3. Add bell peppers and cook until slightly tender.
  4. Stir in pineapple and cook briefly to caramelize.
  5. Add rice and break apart clumps.
  6. Stir in soy sauce, sesame oil, and seasonings.
  7. Cook until heated through and lightly toasted.
  8. Finish with green onions and serve.

Notes

Use day-old rice for best texture. Adjust spice to preference.
