Ingredients
  

Bread Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 1 cup crushed pineapple with juice

Method
 

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add eggs and vanilla extract, mixing until smooth.
  5. Fold in crushed pineapple with its juice.
  6. Gradually add dry ingredients, mixing just until combined.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for 50–55 minutes until golden and a toothpick comes out clean.
  9. Cool on a wire rack before slicing and serving.

Notes

For extra flavor, add shredded coconut or chopped nuts.
