Ingredients
  

Base
  • 8 oz cream cheese softened
  • 0.25 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 cup crushed pineapple well drained
  • 2 cups shredded coconut plus extra for rolling

Method
 

  1. Beat cream cheese and butter until smooth and creamy.
  2. Mix in powdered sugar and vanilla extract until fully combined.
  3. Fold in well-drained crushed pineapple.
  4. Stir in shredded coconut until evenly mixed.
  5. Refrigerate mixture until firm enough to roll.
  6. Roll mixture into bite-sized balls.
  7. Roll each ball in additional shredded coconut.
  8. Chill until set and ready to serve.

Notes

Drain pineapple thoroughly to prevent excess moisture.
