Ingredients
  

Bread & Cheese
  • 4 slices sourdough bread
  • 1 cup shredded mozzarella
  • 0.5 cup grated Parmesan
Spread & Butter
  • 3 tbsp pesto homemade or store-bought
  • 2 tbsp unsalted butter softened
Optional Add-Ins
  • 2-3 slices tomato optional
  • 2-3 leaves fresh basil optional

Equipment

  • Skillet
  • Spatula
  • Knife
  • Cutting board

Method
 

  1. Spread butter on one side of each bread slice.
  2. Flip bread, spread pesto on unbuttered sides.
  3. Add mozzarella, Parmesan, and optional add-ins.
  4. Top with remaining bread slices, buttered side out.
  5. Preheat skillet over medium heat.
  6. Cook sandwiches 3–4 minutes per side until golden and cheese melts.
  7. Serve hot, sliced diagonally.

Notes

Use a lid to help cheese melt evenly without burning bread.
