Ingredients
  

Chicken Marinade
  • 6 chicken thighs bone-in, skin-on
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 2 red chilies chopped
  • 1 tbsp smoked paprika
  • 1 tsp oregano
  • 1 lemon juiced
Rice
  • 1.5 cups long-grain rice
  • 3 cups chicken broth

Method
 

  1. Prepare peri peri marinade and coat chicken thoroughly.
  2. Marinate at least 1 hour or overnight.
  3. Sear chicken until golden, then bake until fully cooked.
  4. Cook rice with sautéed aromatics and broth until tender.
  5. Serve sliced chicken over rice and garnish.
