Ingredients
  

Casserole Base
  • 4 cups broccoli florets fresh or frozen
  • 1 small onion finely chopped
  • 2 eggs large
  • 1 cup mayonnaise
  • 1 can cream of mushroom soup 10.5 oz
  • 2 cups cheddar cheese shredded
Topping
  • 1 cup buttery crackers crushed
  • 2 tbsp butter melted

Method
 

  1. Preheat oven to 350°F (175°C) and grease a casserole dish.
  2. Steam broccoli until just tender, then drain well.
  3. In a bowl, whisk eggs, mayonnaise, and cream of mushroom soup until smooth.
  4. Stir in onion, cheese, salt, and pepper.
  5. Fold broccoli into mixture and spread into casserole dish.
  6. Mix crushed crackers with melted butter and sprinkle on top.
  7. Bake uncovered for 35–40 minutes until golden and bubbly.
