Ingredients
  

Batter
  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 2 cups milk
  • 2 eggs large
  • 3 tbsp butter melted
  • 1 tsp vanilla extract optional
Filling
  • 12 oz breakfast sausage cooked and crumbled
  • 0.25 cup maple syrup plus more for serving

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Cook sausage in a skillet until browned. Drain and set aside.
  3. Whisk dry ingredients together in a large bowl.
  4. Whisk milk, eggs, butter, and vanilla in another bowl.
  5. Combine wet and dry ingredients until just mixed.
  6. Fold cooked sausage into the batter.
  7. Pour batter into baking dish and drizzle with maple syrup.
  8. Bake 30–35 minutes until golden and set. Cool slightly before serving.

Notes

Serve warm with extra maple syrup or fresh fruit.
