Ingredients
  

Cookie Base
  • 1.5 cups unsweetened shredded coconut
  • 0.5 cup almond flour fine
  • 0.25 cup unsweetened cocoa powder
  • 0.5 cup powdered monk fruit sweetener
  • 0.5 cup natural almond butter unsweetened
  • 0.25 cup coconut oil melted
  • 1 tsp vanilla extract
  • 0.25 tsp sea salt

Method
 

  1. Mix dry ingredients in a bowl until well combined.
  2. Warm almond butter and coconut oil over low heat until smooth.
  3. Stir vanilla into warm mixture.

  5. Shape dough into cookies and place on parchment-lined tray.
  6. Refrigerate 20–30 minutes until firm.

Adjust sweetness to taste using monk fruit or erythritol.
