Ingredients
  

Pasta Base
  • 12 oz pasta fettuccine or penne
  • 2 tbsp olive oil or butter
  • 8 oz mushrooms sliced
  • 4 cloves garlic minced
  • 2.5 cups vegetable broth
  • 1 cup milk or light cream
  • 2 cups fresh spinach
  • 1 cup Parmesan cheese grated
  • 1 tsp salt to taste
  • 0.5 tsp black pepper

Method
 

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Add mushrooms and cook until softened and lightly golden.
  3. Stir in garlic and cook until fragrant, about 30 seconds.
  4. Add pasta, vegetable broth, and milk. Stir to combine.
  5. Bring to a gentle boil, then reduce heat and simmer until pasta is tender.
  6. Stir in spinach and let wilt.
  7. Remove from heat and stir in Parmesan until creamy.
  8. Season with salt and pepper, serve warm.
