  • 2 cups elbow macaroni
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • 2 cups sharp cheddar cheese freshly shredded
  • 0.5 cup mozzarella cheese optional
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp garlic powder optional

Method
 

  1. Combine macaroni, milk, and cream in a large pot.
  2. Bring to a gentle simmer over medium heat, stirring frequently.
  3. Cook until pasta is tender and liquid has reduced, about 8–10 minutes.
  4. Add butter, salt, pepper, and garlic powder, stirring until melted.
  5. Reduce heat to low and gradually stir in cheddar cheese.
  6. Add mozzarella and stir until smooth and creamy.
  7. Cook another 1–2 minutes until thickened.
  8. Rest briefly, then serve warm.

Notes

Use freshly shredded cheese for the smoothest sauce.
