Ingredients
  

Vanilla Pudding
  • 3/4 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 tsp salt
  • 2 1/2 cups whole milk
  • 3 egg yolks lightly beaten
  • 2 tbsp unsalted butter
  • 2 tsp vanilla extract
Assembly
  • 4-5 bananas sliced
  • 12-15 vanilla wafers
Whipped Topping
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Method
 

  1. In a medium saucepan, whisk together sugar, flour, and salt. Gradually add milk while whisking.
  2. Cook over medium heat, stirring constantly until mixture thickens and bubbles.
  3. Temper egg yolks by adding a small amount of hot pudding to eggs, then whisk back into saucepan.
  4. Cook 1-2 more minutes until thickened. Remove from heat, stir in butter and vanilla.
  5. Layer vanilla wafers, banana slices, and pudding in a serving dish, repeating layers.
  6. Optional: beat heavy cream with powdered sugar and vanilla until soft peaks form, spread on top.
  7. Cover and chill for at least 2 hours before serving.

Notes

For best results, assemble just before chilling and use ripe bananas for natural sweetness.
