- In a medium saucepan, whisk together sugar, flour, and salt. Gradually add milk while whisking.
- Cook over medium heat, stirring constantly until mixture thickens and bubbles.
- Temper egg yolks by adding a small amount of hot pudding to eggs, then whisk back into saucepan.
- Cook 1-2 more minutes until thickened. Remove from heat, stir in butter and vanilla.
- Layer vanilla wafers, banana slices, and pudding in a serving dish, repeating layers.
- Optional: beat heavy cream with powdered sugar and vanilla until soft peaks form, spread on top.
- Cover and chill for at least 2 hours before serving.
Notes
For best results, assemble just before chilling and use ripe bananas for natural sweetness.
