No-Bake Honey Lavender Cheesecake

Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 5 tbsp unsalted butter melted
  • 2 tbsp honey
Filling
  • 16 oz cream cheese softened
  • 0.75 cup heavy whipping cream
  • 0.5 cup honey
  • 1 tsp vanilla extract
  • 1 tbsp dried culinary lavender
  • 1 tsp lemon zest optional

Method
 

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and honey until evenly mixed.
  2. Press crust into bottom of 9-inch springform pan or dessert dish. Chill 15 minutes.
  3. Steep dried lavender in 2 tbsp warm cream for 5–10 minutes.
  4. Beat cream cheese until smooth, then add honey, vanilla, and lemon zest.
  5. Whip remaining cream to soft peaks. Fold whipped cream and lavender-infused cream into cream cheese mixture.
  6. Pour filling over chilled crust, smooth top, cover, and refrigerate at least 4 hours.
  7. Before serving, drizzle honey and sprinkle lavender buds and lemon zest on top.

Notes

For extra flavor, steep lavender slightly longer or adjust honey to taste.
