Method
- In a medium bowl, combine graham cracker crumbs, melted butter, and honey until evenly mixed.
- Press crust into bottom of 9-inch springform pan or dessert dish. Chill 15 minutes.
- Steep dried lavender in 2 tbsp warm cream for 5–10 minutes.
- Beat cream cheese until smooth, then add honey, vanilla, and lemon zest.
- Whip remaining cream to soft peaks. Fold whipped cream and lavender-infused cream into cream cheese mixture.
- Pour filling over chilled crust, smooth top, cover, and refrigerate at least 4 hours.
- Before serving, drizzle honey and sprinkle lavender buds and lemon zest on top.
Notes
For extra flavor, steep lavender slightly longer or adjust honey to taste.
