Ingredients
  

Energy Ball Base
  • 1.5 cups rolled oats
  • 1 cup finely shredded carrots
  • 0.5 cup natural peanut butter or almond butter
  • 0.33 cup honey or maple syrup
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tsp vanilla extract
  • 1 tbsp chia seeds or ground flaxseed

Method
 

  1. Add rolled oats to a mixing bowl and stir to break up clumps.
  2. Mix in cinnamon, nutmeg, and chia seeds until evenly combined.
  3. Add shredded carrots, nut butter, honey, and vanilla extract.
  4. Stir until the mixture becomes thick and sticky.
  5. Roll mixture into evenly sized balls using your hands.
  6. Chill in the refrigerator for at least 20 minutes before serving.
