Ingredients
  

Salad Base
  • 4 cups mixed leafy greens
  • 1 cup shredded carrots
  • 1 cup red cabbage thinly sliced
  • 1 cup cucumber sliced
  • 0.25 cup fresh herbs parsley or cilantro
  • 0.25 cup pumpkin seeds
Lemon Dressing
  • 3 tbsp fresh lemon juice
  • 3 tbsp olive oil extra virgin
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Equipment

  • Mixing bowls
  • Cutting board
  • Chef’s knife

Method
 

  1. Wash and dry all vegetables thoroughly.
  2. Chop greens and place in a large mixing bowl.
  3. Add carrots, cabbage, cucumber, herbs, and seeds.
  4. Whisk all dressing ingredients together until emulsified.
  5. Pour dressing over salad and toss gently to combine.
  6. Serve immediately or store for meal prep.

Notes

Store dressing separately for longer-lasting crunch when meal prepping.
