Ingredients
  

Pastry Base
  • 1 sheet puff pastry thawed
Filling
  • 2 cups mushrooms sliced
  • 2 shallots sliced
  • 4 oz goat cheese softened
  • 1 tbsp fresh thyme chopped
  • 1 tbsp fresh parsley chopped
  • 1 tbsp butter
  • 1 tbsp olive oil

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Sauté shallots in butter and olive oil until soft and lightly caramelized.
  3. Add mushrooms and cook until golden and moisture evaporates.
  4. Mix goat cheese with herbs until smooth.
  5. Cut puff pastry and score borders.
  6. Spread goat cheese, top with mushrooms, brush edges with egg wash.
  7. Bake 18–22 minutes until golden and puffed.

Notes

Serve warm or room temperature. Can be made ahead and reheated.
