Method
- Prepare tart dough by combining flour and salt, cutting in butter, and adding cold water until dough forms. Chill 30 minutes.
- Roll dough, press into tart pans, and chill while preparing filling.
- Sauté shallots in olive oil until soft, add mushrooms and cook until golden. Stir in herbs and season.
- Whisk goat cheese, cream, and egg until smooth.
- Fill tart shells with goat cheese mixture and top with mushrooms.
- Bake at 375°F (190°C) for 25–30 minutes until golden and set.
Notes
Serve warm or at room temperature. Great for entertaining.
