Ingredients
  

Tart Shell
  • 1.5 cups all-purpose flour
  • 0.5 tsp salt
  • 0.5 cup unsalted butter cold, cubed
  • 3-4 tbsp cold water
Filling
  • 2 cups mushrooms sliced
  • 2 shallots thinly sliced
  • 1 tbsp olive oil
  • 1 tsp fresh thyme chopped
  • 1 tsp fresh parsley chopped
  • 4 oz goat cheese softened
  • 0.25 cup heavy cream
  • 1 egg

Method
 

  1. Prepare tart dough by combining flour and salt, cutting in butter, and adding cold water until dough forms. Chill 30 minutes.
  2. Roll dough, press into tart pans, and chill while preparing filling.
  3. Sauté shallots in olive oil until soft, add mushrooms and cook until golden. Stir in herbs and season.
  4. Whisk goat cheese, cream, and egg until smooth.
  5. Fill tart shells with goat cheese mixture and top with mushrooms.
  6. Bake at 375°F (190°C) for 25–30 minutes until golden and set.

Notes

Serve warm or at room temperature. Great for entertaining.
