Ingredients
  

Crust
  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter cold, cubed
  • 0.25 tsp salt
  • 3-4 tbsp cold water
Filling
  • 2 cups mushrooms sliced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 shallot chopped
  • 2 cloves garlic minced
  • 4 oz goat cheese soft
  • 2 eggs
  • 0.5 cup heavy cream

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Prepare tart dough and chill for 30 minutes.
  2. Preheat oven to 375°F (190°C).
  3. Roll dough, press into tart pans, and blind bake.
  4. Sauté mushrooms with butter, oil, shallot, and garlic.
  5. Whisk eggs and cream, fold in goat cheese and mushrooms.
  6. Fill tart shells and bake until set.

Notes

Serve warm or at room temperature. Garnish with fresh herbs.
