Ingredients
  

Apple Filling
  • 5-6 medium apples peeled, cored, and sliced (mix of Granny Smith & Honeycrisp)
  • 2 tbsp pure maple syrup
  • 1 tbsp lemon juice fresh
  • 1 tsp vanilla extract
  • 0.25 cup apple cider or water
  • 1.5 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.125 tsp ground cardamom optional
  • 1 pinch sea salt
Crumble Topping
  • 1.5 cups old-fashioned rolled oats certified gluten-free if needed
  • 0.5 cup almond flour
  • 0.33 cup chopped pecans or walnuts
  • 0.25 cup unsweetened shredded coconut
  • 0.25 cup pure maple syrup
  • 3 tbsp coconut oil or cold unsalted butter
  • 1 tsp ground cinnamon
  • 0.25 tsp sea salt

Method
 

  1. Preheat oven to 350°F (175°C). Lightly grease an 8x8 inch baking dish.
  2. In a large bowl, combine all apple filling ingredients. Toss to coat evenly.
  3. Transfer the apple mixture to the prepared baking dish, spreading it evenly.
  4. In the same bowl, combine the oats, almond flour, nuts, coconut, cinnamon, and salt for the topping.
  5. Add the maple syrup and solid coconut oil (or butter) to the oat mixture.
  6. Use your fingers or a fork to mix until the topping is crumbly and evenly moistened.
  7. Sprinkle the crumble topping evenly over the apple filling.
  8. Bake for 40-50 minutes, until the filling is bubbly and the topping is golden brown.
  9. Let the crumble cool for 15-20 minutes before serving to allow the filling to set.

Notes

For a crispier topping, ensure your coconut oil or butter is cold when mixing. A mix of tart and sweet apples yields the best flavor. Store leftovers in the fridge for up to 5 days.
