Ingredients
  

Bread Batter
  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp cloves optional
  • 2 tbsp brown sugar
  • 0.75 cup molasses
  • 1.25 cups buttermilk
  • 2 tbsp unsalted butter melted
  • 0.5 cup rolled oats

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Whisk together dry ingredients in a large bowl.
  3. Mix molasses, buttermilk, and melted butter in a separate bowl.
  4. Combine wet and dry ingredients gently until just mixed.
  5. Shape dough into a round loaf and score an X on top.
  6. Bake 35–40 minutes until crust is firm and loaf sounds hollow.
  7. Cool on wire rack before slicing.

Notes

For extra flavor, add chopped nuts or seeds. Do not overmix the dough.
