Ingredients
  

Casserole Base
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 10 oz Rotel tomatoes with green chilies undrained
  • 8 oz cream cheese softened
  • 1 cup sour cream
  • 1 cup corn optional
Topping
  • 2 cups shredded cheddar cheese
  • 2 cups crushed tortilla chips or Doritos

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Cook ground beef in a skillet until browned. Drain excess grease.
  3. Stir in taco seasoning and Rotel tomatoes. Simmer 2–3 minutes.
  4. Add cream cheese and stir until melted and smooth.
  5. Mix in sour cream and corn until fully combined.
  6. Transfer mixture to baking dish and spread evenly.
  7. Top with shredded cheese and crushed chips.
  8. Bake uncovered for 25–30 minutes until bubbly and golden.

Notes

Let rest 5 minutes before serving for easier slicing.
