Ingredients
  

Casserole
  • 1 lb ground beef lean
  • 1 cup long-grain white rice uncooked
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes with juices
  • 1 cup tomato sauce
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels
  • 2 cups shredded cheese cheddar or Monterey Jack

Equipment

  • Large skillet
  • Baking dish
  • Wooden spoon
  • Aluminum foil

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Cook ground beef with onion in a skillet until browned. Add garlic and spices.
  3. Stir in tomatoes, tomato sauce, rice, and liquid. Mix well.
  4. Add beans and corn, then transfer mixture to baking dish.
  5. Cover with foil and bake 30–35 minutes until rice is tender.
  6. Uncover, top with cheese, and bake until melted and bubbly.
