Mediterranean-Style Salmon Tacos

Ingredients
  

Salmon & Marinade
  • 1 lb salmon fillets skin removed
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 lemon juice from 1 lemon
Taco Fillings
  • 8 small taco shells corn or flour
  • 1 cup cherry tomatoes halved
  • 0.5 cup cucumber diced
  • 0.25 cup red onion thinly sliced
  • 0.25 cup Kalamata olives chopped
  • 0.25 cup feta cheese crumbled
  • 0.25 cup fresh parsley chopped
Tzatziki Sauce
  • 0.5 cup Greek yogurt
  • 0.25 cup cucumber grated and drained
  • 1 clove garlic minced
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • to taste salt and pepper

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place salmon fillets on the baking sheet and brush with olive oil, paprika, garlic powder, salt, pepper, and lemon juice.
  3. Bake salmon for 12–15 minutes until flaky. Let rest 5 minutes before flaking into bite-sized pieces.
  4. In a small bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, salt, and pepper. Mix well.
  5. Chop cherry tomatoes, cucumber, red onion, and olives. Crumble feta and chop fresh herbs.
  6. Warm taco shells in oven 3–4 minutes or in skillet 1–2 minutes per side.
  7. Assemble tacos: place salmon in shells, top with vegetables, olives, feta, and tzatziki. Garnish with fresh herbs.
  8. Serve immediately with optional lemon wedges or red pepper flakes.

Notes

For a smoky flavor, grill salmon instead of baking. Add radishes or microgreens for extra crunch.
