Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place salmon fillets on the baking sheet and brush with olive oil, paprika, garlic powder, salt, pepper, and lemon juice.
- Bake salmon for 12–15 minutes until flaky. Let rest 5 minutes before flaking into bite-sized pieces.
- In a small bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, salt, and pepper. Mix well.
- Chop cherry tomatoes, cucumber, red onion, and olives. Crumble feta and chop fresh herbs.
- Warm taco shells in oven 3–4 minutes or in skillet 1–2 minutes per side.
- Assemble tacos: place salmon in shells, top with vegetables, olives, feta, and tzatziki. Garnish with fresh herbs.
- Serve immediately with optional lemon wedges or red pepper flakes.
Notes
For a smoky flavor, grill salmon instead of baking. Add radishes or microgreens for extra crunch.
