Ingredients
  

Salmon
  • 1 lb fresh salmon fillets skin removed
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 lemon juiced
Mediterranean Salsa
  • 1 cup cherry tomatoes diced
  • 0.5 cucumber finely chopped
  • 0.25 red onion minced
  • 2 tbsp fresh parsley chopped
  • 2 tbsp fresh dill optional
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
Lemon Yogurt Sauce
  • 0.75 cup Greek yogurt
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 garlic clove minced
Assembly
  • 8 tortillas small flour or corn
  • 1 cup fresh greens spinach or arugula

Equipment

Method
 

  1. Preheat oven to 400°F (205°C).
  2. Place salmon on baking sheet and season with oil, spices, and lemon.
  3. Bake 12–14 minutes until flaky.
  4. Mix Mediterranean salsa ingredients in a bowl and set aside.
  5. Combine Greek yogurt sauce ingredients and refrigerate.
  6. Warm tortillas in a skillet for 20 seconds per side.
  7. Assemble tacos with greens, salmon, salsa, and yogurt sauce.
