Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash sweet potatoes, pierce with a fork, rub with olive oil, and place on baking sheet.
- Roast for 40–45 minutes until fork-tender.
- In a bowl, mix chickpeas, tomatoes, olives, garlic, oregano, paprika, salt, and pepper.
- Slice roasted sweet potatoes lengthwise and gently mash centers.
- Fill sweet potatoes with Mediterranean mixture and top with feta.
- Bake an additional 8–10 minutes until warmed through.
Notes
Delicious with a lemon or tahini drizzle.
