Ingredients
  

Steak Marinade
  • 1 lb sirloin or ribeye steak thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • salt and pepper to taste
Bowl Ingredients
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 0.5 cup kalamata olives pitted and halved
  • 0.5 cup feta cheese cubed
  • 0.25 red onion thinly sliced
  • 2 tbsp tzatziki sauce
  • 2 tbsp fresh parsley chopped
  • lemon wedges for garnish

Method
 

  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, smoked paprika, salt, and pepper. Marinate steak for 30–120 minutes.
  2. Cook quinoa with 1 cup water and pinch of salt for 15 minutes. Fluff and set aside.
  3. Prep vegetables: halve tomatoes, dice cucumbers, slice red onion, chop parsley.
  4. Heat skillet over medium-high. Cook steak 2–3 min per side for medium-rare. Let rest 5 min.
  5. Assemble bowls: quinoa base, top with steak, vegetables, feta, olives, drizzle tzatziki, sprinkle parsley.
  6. Serve immediately with lemon wedges.

Notes

For meal prep, store steak and grains separately to maintain freshness.
