Ingredients
  

  • 1.5 lb chicken breast sliced
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 zucchini sliced
  • 1 cup cherry tomatoes halved
  • 0.5 cup Kalamata olives sliced
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 lemon juiced and zested

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken, season, and cook until golden and cooked through. Remove and set aside.
  3. In the same pan, sauté onion and garlic until fragrant.
  4. Add vegetables and cook until tender-crisp.
  5. Return chicken to pan, add olives, lemon juice, and zest.
  6. Toss, garnish with parsley, and serve.

Notes

Serve with rice, quinoa, or pita bread for a complete Mediterranean meal.
