  • 2 chicken breasts boneless skinless
  • 10 oz penne pasta
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 0.75 cup chicken broth
  • 0.5 cup parmesan cheese grated
  • 0.5 cup sun-dried tomatoes chopped
  • 1 tsp Italian seasoning
  • 0.5 tsp red pepper flakes
  • salt to taste
  • black pepper to taste

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve some pasta water and drain.
  2. Season and sear chicken in olive oil until golden and cooked through. Remove and rest.
  3. Sauté garlic, then add broth, cream, seasoning, and sun-dried tomatoes.
  4. Simmer sauce until slightly thickened, then stir in parmesan.
  5. Add pasta and sliced chicken back to skillet. Toss and simmer briefly before serving.

Notes

Use freshly grated parmesan for best flavor and texture.
