Ingredients
  

  • 2 pieces chicken breasts boneless, skinless
  • 12 oz pasta penne or fettuccine
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 0.5 cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.75 cup parmesan cheese freshly grated

Equipment

  • Large skillet
  • Pasta pot
  • Wooden spoon
  • Knife and cutting board

Method
 

  1. Cook pasta in salted water until al dente. Reserve pasta water and drain.
  2. Season chicken and sear in olive oil and butter until golden and cooked through.
  3. Remove chicken and sauté garlic and sun-dried tomatoes in the same skillet.
  4. Add broth and cream, simmer gently.
  5. Stir in parmesan until sauce thickens.
  6. Return chicken and pasta to skillet and toss to coat.

Notes

Adjust sauce thickness with reserved pasta water as needed.
