Ingredients
  

Mango Syrup
  • 1.5 cups mango purée fresh
  • 2 tbsp maple syrup
  • 1 tbsp lime juice
  • 0.25 cup warm water
Cream Filling
  • 1 cup coconut cream chilled
  • 1 cup dairy-free cream cheese softened
  • 0.33 cup powdered sugar
  • 1 tsp vanilla extract
  • 0.5 tsp lime zest
Assembly
  • 24 eggless ladyfinger biscuits
  • 1 fresh mango diced
  • 2 tbsp coconut powder for dusting

Method
 

  1. Mix mango purée, maple syrup, lime juice, and warm water to make syrup.
  2. Whip chilled coconut cream until fluffy.
  3. Beat dairy-free cream cheese with sugar, vanilla, and zest until smooth.
  4. Fold whipped coconut cream into cream cheese mixture.
  5. Dip ladyfingers briefly into mango syrup.
  6. Layer soaked ladyfingers, cream mixture, and diced mango in serving dish.
  7. Repeat layers and smooth top.
  8. Dust with coconut powder and refrigerate at least 4 hours before serving.

Notes

Chill overnight for best texture and flavor development.
