Method
- Whisk chia seeds, coconut milk, maple syrup, and vanilla extract together.
- Let sit 5 minutes, whisk again, then refrigerate for at least 2 hours.
- Blend half the mango into purée and leave remaining mango diced.
- Layer chia pudding, mango purée, and diced mango in serving glasses.
- Top with dragon fruit cubes and shredded coconut. Serve chilled.
Notes
Stir twice during setting to prevent clumping. Store refrigerated up to 4 days.
