Ingredients
  

Chia Base
  • 0.5 cup chia seeds
  • 2 cups coconut milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
Fruit Layers
  • 1 mango ripe, diced
  • 1 dragon fruit cubed
  • 1 tbsp shredded coconut optional garnish

Method
 

  1. Whisk chia seeds, coconut milk, maple syrup, and vanilla extract together.
  2. Let sit 5 minutes, whisk again, then refrigerate for at least 2 hours.
  3. Blend half the mango into purée and leave remaining mango diced.
  4. Layer chia pudding, mango purée, and diced mango in serving glasses.
  5. Top with dragon fruit cubes and shredded coconut. Serve chilled.

Notes

Stir twice during setting to prevent clumping. Store refrigerated up to 4 days.
