- Whisk chia seeds, coconut milk, sweetener, and vanilla in a bowl.
- Rest 5 minutes, whisk again, then refrigerate at least 4 hours or overnight.
- Blend mango until smooth and chill.
- Blend dragon fruit until smooth and chill.
- Layer chia pudding with mango and dragon fruit purees.
- Top with fresh fruit and serve chilled.
Notes
For best texture, whisk twice before chilling.
