Ingredients
  

Chia Base
  • 0.5 cup chia seeds
  • 2 cups coconut milk
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
Fruit Layers
  • 1 cup fresh mango blended
  • 1 cup dragon fruit blended

Method
 

  1. Whisk chia seeds, coconut milk, sweetener, and vanilla in a bowl.
  2. Rest 5 minutes, whisk again, then refrigerate at least 4 hours or overnight.
  3. Blend mango until smooth and chill.
  4. Blend dragon fruit until smooth and chill.
  5. Layer chia pudding with mango and dragon fruit purees.
  6. Top with fresh fruit and serve chilled.

Notes

For best texture, whisk twice before chilling.
