Banana Cake
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 tsp cinnamon
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar packed
  • 2 eggs large
  • 1 tsp vanilla extract
  • 1 cup mashed ripe bananas
  • 0.5 cup buttermilk
Cream Cheese Frosting
  • 0.5 cup cream cheese softened
  • 0.25 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line a baking pan with parchment paper.
  2. Whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. Cream butter and sugars until light and fluffy. Add eggs and vanilla.
  4. Mix in mashed bananas. Alternate adding dry ingredients and buttermilk.
  5. Pour batter into pan and smooth the top.
  6. Bake 35–40 minutes until a toothpick comes out clean. Cool completely.
  7. Beat cream cheese and butter until smooth. Add powdered sugar and vanilla.
  8. Frost cooled cake, slice, and serve.

Notes

Use very ripe bananas for best flavor and moisture.
