- Cook oil and flour over medium heat, stirring constantly, until dark brown roux forms.
- Add chopped vegetables and cook until softened.
- Stir in sausage, seasonings, and stock. Simmer.
- Add okra and shrimp. Cook until shrimp are done.
- Serve over rice with garnishes.
