- Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment paper.
- Mix oats, flour, sugars, baking powder, and salt.
- Stir in melted butter and vanilla until crumbly.
- Press two-thirds into pan and bake 10 minutes.
- Whisk filling ingredients until smooth.
- Pour filling over crust and top with remaining crumble.
- Bake 22–25 minutes until golden and set.
- Cool completely before slicing.
Notes
Chill before slicing for clean edges. Store refrigerated.
