Ingredients
  

Crust and Crumble
  • 1.5 cups old-fashioned rolled oats
  • 1.25 cups all-purpose flour
  • 0.5 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.75 cup unsalted butter melted
  • 1 tsp vanilla extract
Lemon Filling
  • 1 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 2 eggs large
  • 0.33 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1 pinch salt

Equipment

  • Mixing bowls
  • Baking sheet

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment paper.
  2. Mix oats, flour, sugars, baking powder, and salt.
  3. Stir in melted butter and vanilla until crumbly.
  4. Press two-thirds into pan and bake 10 minutes.
  5. Whisk filling ingredients until smooth.
  6. Pour filling over crust and top with remaining crumble.
  7. Bake 22–25 minutes until golden and set.
  8. Cool completely before slicing.

Notes

Chill before slicing for clean edges. Store refrigerated.
