  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 0.25 cup fresh lemon juice
  • 1 lemon zest from 1 lemon
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 0.5 tsp dried thyme
  • 0.5 tsp dried oregano
  • 1 tbsp unsalted butter optional

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken dry and place in baking dish.
  3. Mix olive oil, garlic, lemon juice, zest, and spices.

  5. Bake 35-40 minutes until internal temperature reaches 165°F.
  6. Broil 2-3 minutes for crispy skin.
  7. Rest 5 minutes before serving.
