  • 4 fillets salmon
  • 3 tbsp unsalted butter
  • 2 tbsp lemon juice fresh
  • 1 tsp lemon zest
  • 3 cloves garlic minced
  • 1.5 lb baby potatoes halved
  • 2 cups broccoli florets

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Toss potatoes with olive oil and seasonings. Roast 20 minutes.
  3. Add broccoli and roast until tender.
  4. Cook salmon in skillet with butter, garlic, lemon juice, and zest.
  5. Serve salmon with potatoes and broccoli, spooning sauce on top.
