Ingredients
  

Casserole Base
  • 8 eggs large
  • 0.5 cup heavy cream
  • 1 lb breakfast sausage sugar-free
  • 1 cup cheddar cheese shredded
  • 0.5 cup mozzarella cheese shredded
  • 1 cup bell peppers diced
  • 1 cup spinach fresh
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Cook sausage in a skillet until browned. Set aside.
  3. Sauté vegetables until softened, then add spinach to wilt.
  4. Whisk eggs, cream, salt, and pepper in a large bowl.
  5. Stir in sausage, vegetables, and cheese.
  6. Pour mixture into baking dish and bake 35–40 minutes until set.
  7. Rest 5 minutes before slicing and serving.
