Method
- Season steaks generously with salt and pepper and let rest at room temperature.
- Heat oil in a skillet over medium-high heat until shimmering.
- Sear steaks for 3–4 minutes per side until deeply browned.
- Add butter and baste steaks for 1 minute.
- Remove steaks and let rest.
- Add garlic to the same pan and sauté briefly.
- Pour in cream and mustard, simmer until slightly thickened.
- Serve sauce over sliced steaks.
