Ingredients
  

Steak
  • 2 beef steaks ribeye or sirloin
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
Creamy Garlic Sauce
  • 3 cloves garlic minced
  • 0.75 cup heavy cream
  • 1 tsp Dijon mustard optional

  • Cast iron skillet

Method
 

  1. Season steaks generously with salt and pepper and let rest at room temperature.
  2. Heat oil in a skillet over medium-high heat until shimmering.
  3. Sear steaks for 3–4 minutes per side until deeply browned.
  4. Add butter and baste steaks for 1 minute.
  5. Remove steaks and let rest.
  6. Add garlic to the same pan and sauté briefly.
  7. Pour in cream and mustard, simmer until slightly thickened.
  8. Serve sauce over sliced steaks.

Notes

Let steak rest before slicing for maximum juiciness.
