Jamie Oliver–Inspired Apple Pie Cake

Ingredients
  

Cake Batter
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.75 cup milk or apple cider
Apple Filling
  • 3 apples peeled and sliced
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice

Equipment

  • Mixing bowls
  • Baking pan
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line a baking pan.
  2. Toss apples with sugar, cinnamon, and lemon juice. Set aside.
  3. Whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Cream butter and sugars until light and fluffy. Add eggs and vanilla.
  5. Alternate adding dry ingredients and milk until just combined.
  6. Fold half the apples into batter and spread into pan.
  7. Top with remaining apples and bake 40–45 minutes.
  8. Cool before slicing and serving.

Notes

Serve warm or at room temperature. Excellent with ice cream or custard.
