Ingredients
  

Main Ingredients
  • 2.5 lbs bone-in chicken pieces thighs and drumsticks
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp allspice
  • 1 tsp dried thyme
  • 2 scallions chopped
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 Scotch bonnet pepper whole
  • 2 tbsp soy sauce
  • 1 tbsp browning sauce
  • 1 tbsp ketchup
  • 1.5 cups chicken stock

Equipment

  • Large Heavy-Bottomed Pot
  • Mixing bowl
  • Knife
  • Cutting board

Method
 

  1. Season and marinate chicken for at least 2 hours.
  2. Brown chicken in oil until caramelized.
  3. Sauté vegetables in same pot.
  4. Return chicken and add stock and marinade.
  5. Simmer 30–40 minutes until tender and sauce thickens.

Notes

For milder heat, keep Scotch bonnet whole and remove before serving.
