Method
- Brown beef in olive oil until seared on all sides. Remove and set aside.
- Sauté onion, carrots, and celery until softened. Add garlic and cook briefly.
- Stir in tomato paste and cook 1–2 minutes.
- Return beef to pot and add tomatoes, broth, herbs, salt, and pepper.
- Simmer covered for 45–60 minutes until beef is tender.
- Add remaining vegetables and cook 15–20 minutes more.

Tastes even better the next day and freezes well.
