Ingredients
  

Zucchini Skewers
  • 3 zucchini sliced thick
  • 4 tbsp unsalted butter melted
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp Italian seasoning
  • 2 tbsp Parmesan cheese grated
  • 1 tbsp fresh parsley chopped

Method
 

  1. Soak wooden skewers in water for 20 minutes if using.
  2. Preheat grill to medium heat or oven to 425°F (220°C).
  3. Whisk melted butter, olive oil, garlic, salt, pepper, and seasoning.
  4. Thread zucchini onto skewers evenly.
  5. Brush generously with garlic butter mixture.
  6. Grill 8–10 minutes or roast 15–18 minutes, turning once.
  7. Sprinkle with Parmesan and parsley before serving.

Notes

For vegan version, replace butter with plant-based butter or olive oil.
