Method
- Soak wooden skewers in water for 20 minutes if using.
- Preheat grill to medium heat or oven to 425°F (220°C).
- Whisk melted butter, olive oil, garlic, salt, pepper, and seasoning.
- Thread zucchini onto skewers evenly.
- Brush generously with garlic butter mixture.
- Grill 8–10 minutes or roast 15–18 minutes, turning once.
- Sprinkle with Parmesan and parsley before serving.
Notes
For vegan version, replace butter with plant-based butter or olive oil.
