Ingredients
  

Cookie Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar packed
  • 1 egg large
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 2 tbsp heavy cream
Topping
  • 0.5 cup granulated sugar for caramelizing

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter and sugars until light and fluffy.
  4. Add egg, egg yolk, vanilla, and cream. Mix well.
  5. Combine dry and wet ingredients until just mixed.
  6. Scoop dough onto baking sheet and bake 10–12 minutes.
  7. Cool completely before adding sugar topping.
  8. Sprinkle sugar and torch until caramelized. Let harden before serving.

Notes

Torch sugar just before serving for best texture.
