Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
- Sauté onion in olive oil until soft, add garlic briefly, then cool.
- Mash lentils in a bowl and combine with remaining meatball ingredients.
- Form mixture into balls and arrange on baking sheet.
- Bake 22–25 minutes, flipping halfway, until golden.
- Mix all tzatziki ingredients in a bowl and chill until serving.
Notes
Serve warm with pita, salad, or grain bowls.
