Ingredients
  

Lentil Meatballs
  • 2 cups cooked lentils well-drained
  • 1 egg or flax egg
  • 0.75 cup breadcrumbs
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 0.5 tsp ground cumin
  • 1 tbsp lemon zest
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 0.5 cucumber grated and drained
  • 1 clove garlic grated

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
  2. Sauté onion in olive oil until soft, add garlic briefly, then cool.
  3. Mash lentils in a bowl and combine with remaining meatball ingredients.
  4. Form mixture into balls and arrange on baking sheet.
  5. Bake 22–25 minutes, flipping halfway, until golden.
  6. Mix all tzatziki ingredients in a bowl and chill until serving.

Notes

Serve warm with pita, salad, or grain bowls.
