Ingredients
  

Stew Base
  • 2 tbsp olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 3 carrots sliced
  • 2 stalks celery chopped
  • 4 cups potatoes cubed
  • 4 cups vegetable broth
  • 2 bay leaves
  • 1 tsp thyme
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and cook until softened.
  3. Stir in garlic, carrots, and celery; cook briefly.
  4. Add potatoes, vegetable broth, bay leaves, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer until tender.
  6. Remove bay leaves, garnish with parsley, and serve.

Notes

This stew thickens naturally from the potatoes; no flour needed.
