- Set Instant Pot to sauté mode and heat olive oil.
- Season chicken with salt and pepper and sear lightly on both sides.
- Remove chicken and sauté garlic briefly.
- Deglaze with chicken broth, scraping the bottom.
- Whisk honey and Dijon mustard and pour over chicken.
- Pressure cook on high for 8 minutes with 5-minute natural release.
- Thicken sauce if desired and serve.
