- In a bowl, whisk together cornmeal, flour, baking powder, baking soda, salt, and sugar.
- Stir in minced onion until evenly coated.
- In another bowl, whisk egg, buttermilk, and water.
- Combine wet and dry ingredients until a thick batter forms.
- Heat oil to 350°F (175°C) in a deep skillet.
- Drop spoonfuls of batter into oil and fry until golden brown, turning as needed.
- Remove and drain on wire rack or paper towels.
- Serve hot with dipping sauce of choice.
Notes
For extra flavor, add jalapeños or shredded cheese to the batter.
