Ingredients
  

Batter
  • 1 cup yellow cornmeal
  • 0.5 cup all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.75 tsp salt
  • 1 tbsp granulated sugar
  • 0.25 cup onion finely minced
  • 1 egg large
  • 0.75 cup buttermilk
  • 0.25 cup water
  • vegetable oil for frying

Method
 

  1. In a bowl, whisk together cornmeal, flour, baking powder, baking soda, salt, and sugar.
  2. Stir in minced onion until evenly coated.
  3. In another bowl, whisk egg, buttermilk, and water.
  4. Combine wet and dry ingredients until a thick batter forms.
  5. Heat oil to 350°F (175°C) in a deep skillet.
  6. Drop spoonfuls of batter into oil and fry until golden brown, turning as needed.
  7. Remove and drain on wire rack or paper towels.
  8. Serve hot with dipping sauce of choice.

Notes

For extra flavor, add jalapeños or shredded cheese to the batter.
