Grilled Cheese Burrito
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup cooked chicken breast diced (optional)
  • 0.5 cup black beans rinsed and drained
  • 0.5 cup corn kernels fresh or frozen
  • 0.25 cup red onion diced
  • 0.25 cup cilantro chopped
  • 1 jalapeño finely chopped (optional)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Mix chicken, beans, corn, onion, cilantro, jalapeño, and spices in a bowl.
  2. Lay out tortillas and add cheese layer in the center.
  3. Add filling, then add more cheese on top.
  4. Fold sides and roll into a burrito shape.
  5. Heat skillet with butter and olive oil. Place burrito seam-side down.
  6. Cook 2-3 minutes each side until golden and crispy.
  7. Let rest 1 minute, then slice and serve with salsa and sour cream.

Notes

Customize fillings with your favorite ingredients. Cook low-medium heat to prevent burning.
