- Mix chicken, beans, corn, onion, cilantro, jalapeño, and spices in a bowl.
- Lay out tortillas and add cheese layer in the center.
- Add filling, then add more cheese on top.
- Fold sides and roll into a burrito shape.
- Heat skillet with butter and olive oil. Place burrito seam-side down.
- Cook 2-3 minutes each side until golden and crispy.
- Let rest 1 minute, then slice and serve with salsa and sour cream.
